NOBILE: bodied flavour, obtained from the first pressing of olives Coratina, Leccina, Cerasola, frantoio and harvested by hand. Particularly suitable for use raw as a condiment for salads and grilled meat . Well suited for structured settle plates.

Aftertaste: bitter and spicy.
Hint: green tomato and artichoke.

DELICATO: bodied flavor and delicate obtained from the first pressing of olives harvested by hand Ogliarola. Particularly suitable for use raw as a condiment for seafood salads and grilled fish. Lends itself very well to dress as a simple soup of legumes.

Aftertaste: bitter and slightly spicy
